11lb starting prime brisket
Trim the night before
250F
6 hours, then wrap (stalling around 170)
Another hour, pulled with 200F on point and flat temps

9/23/20:
9.25 lb flat
Start fire 6
Trim night before, season morning of
No wrap, ~9.5 hrs
On the dry side, but was that from no wrap or it bring just the flat?

3/13/21
16lb full, prime
Trim night before (14.8 lb after trim). Uncovered, on sheet tray/rack
0730 goes on
4 hours wrap it, flat at 180, point at 145 (really asymetric on this one).. Averaging 240F.
7 hours pull it. Flat was >200 for >2 hours, point just reached 198.

Trim morning of
630 start fire, trim and season
730 on
1300 wrap. Fireboard has been massively fucking up so no good pit temp. 167 today, 156 point
1545 pull off, 195 on both

4/12/26
11.54 lb from Walden, very asymmetric size
Start smoker at 745, set to 225
On smoker at 830
Wrap at 12, both hovering 160. But I think the probe in the flat is broken
Pull 1620, maybe 200 each
