Chicken Tagine with Chickpeas

3.5-4.5 lbs chicken parts

2 Tbsp butter

2 cups chopped onions

1/2 cup chopped green onions

1 can chickpeas, drained and rinsed

1 Tbsp minced garlic

1 tsp ground ginger

1/2 tsp ground cinnamon

1/8-1/4 tsp ground red pepper

1 cup water

1/2 cup chopped parsley and/or cilantro

Heat butter in a skillet or Dutch oven over medium high heat. Season chicken with salt and pepper, brown on both sides and remove to a plate.

Add onions and scallions to the pan and cook until translucent. Stir in the chickpeas and spices.

Return chicken to the pan. Add water. Bring to a boil. Reduce heat to a simmer. Cover tightly and cook until thigh registers 180 F, 35-45 minutes.

Remove from heat and stir in parsley or cilantro. Season with salt and pepper.
